There are two kinds of muffins in our fridge right now – egg muffins and fiber muffins.
And my husband Rob grabs at least one every morning on his way out the door.
This might not sound groundbreaking, but in our house, it’s a quiet shift that’s made a real difference.
Rob is a little older than me, and while he’s always been a healthy guy, he’s getting older, and has been looking for ways to simplify his nutrition and meet what his body needs. Rob is all about convenience when it comes to food, so he wanted something quick, that he could grab on his way out the door, and would actually fuel him instead of just fill him up.
Enter: egg muffins and fiber muffins.
These two recipes have become our go-to. I make a batch on the weekend, store them in the fridge, and Rob grabs them on his way out the door in the morning—or packs them for a quick lunch.
Protein handled. Fiber handled. No thinking required.
And that’s exactly the point.
I wasn’t pushing Rob to change anything. He just watched what I was doing, saw that it worked, and wanted to make small shifts for himself.
When You Know What to Look For, Healthy Doesn’t Have to Be Hard
One of the biggest things I see with the midlife women I work with is the belief that eating well has to be complicated. That it requires elaborate meal prep, hours in the kitchen, or constant variety to stay “interesting.
But here’s what I’ve learned over more than a decade of coaching: the habits that stick are the ones that fit your real life. Not your ideal life. Not the life you’ll have when things calm down. But your actual, busy, full life right now.
Rob wasn’t looking for a nutrition overhaul. He just wanted an easy way to get in more of the protein and fiber his body needs to function well—two things that matter more as we age, especially for blood sugar balance, sustained energy, and metabolic health.
